This August, we're excited to be working with Aqua Nueva restaurant in Westminster to help ensure that their celebration of La Tomatina, ends in an environmentally friendly way. The event is bringing a taste of the festival from Spain to London with a selection of small tomato based dishes and a cocktail followed by a cocktail masterclass, a Ketel One Bloody Mary and a tomato fight in the Spanish tradition, using only tomatoes that would otherwise have gone to waste.
Our role?
Working on behalf of Westminster City Council, we will make sure the waste from tomatoes used in the fight goes on for reprocessing at an Anaerobic Digestion plant, where instead of powering up people, they can power up the National Grid.
